I tried a new recipe for dinner last evening – Salmon Croquettes. It sounds, and looks, rather fancy, but they are easy to make. I used some of the frozen red salmon that Randy and I caught last summer – of course that makes the difference!
After steaming the salmon, I flaked into a bowl, added the remaining ingredients, and formed the patties. I let them sit in the refrigerator for a few hours before cooking so the flavors could “marry.”
I think this is my new favorite salmon recipe! They were delicious!
